Claire’s Curried Lentil Soup
Ingredients:(Makes 3 servings)
1/2 cup dry lentils1 carrot, grated3 cups cauliflower1 red bell pepper1 small onion1 clove garlic1 tsp garam masala1 tsp black mustard seeds, toasted1 tsp cumin seeds, toasted1/2 tsp turmeric1 tsp coriander1/2 tsp cayenne1/2 tsp asafetida1 dried chile pepper1 1/2 tsp sea salt5 cups water
Directions:
Grate the carrot. Chop up the cauliflower, onion, pepper.Mince the garlic.
Put everything but the garam masala and salt into a pot andsimmer until tender.
Remove the hot chile pepper and puree everything with animmersion blender.
Stir in garam masala and salt to taste and serve.
