
Is it too early for Halloween to be posting this? I figured it takes some time to find that "perfect" treat for your kids or for a dinner party. Either way, this cake is a fun and delicious way to get everybody all excited for dessert. It is a really chocolaty cake with chocolate buttercream and as if that wasn't enoug, it's topped with finely crushed chocolate cookies. How good does that sound?

WARNING: Kids will want to "help you" putting this cake together so be ready with extra paper towels to clean the mess ;)

Ingredients:
For the cake:1 cup granulated sugar1 cup light brown sugar1 3/4 cups all-purpose flour3/4 cup unsweetened cocoa powder1 1/2 teaspoons baking powder2 teaspoons baking soda1 teaspoon salt1/2 cup canola oil2 large eggs1 cup of buttermilk2 teaspoons vanilla extract1 teaspoon instant coffee1 cup of hot water
Preheat oven to 350 F.grease and flour a 9 x 13 inch cake pan. In the bowl of an electric mixer fitted with the paddle attachment, combine the sugar, brown sugar, flour, cocoa powder, baking powder, baking soda and salt at low speed until blended. In a separate mixing bowl, whisk together the oil, eggs, buttermilk and vanilla. Slowly add the liquid ingredients into the dry ingredients on low speed until just blended. Scrape around the bowl with a rubber spatula, scrape the bottom and the sides. Mix the coffee powder into the hot water and pour coffee into the batter, blend well on low speed for 20 seconds. The batter will be thin, don't worry, that's the way it should be. pour batter into prepared cake pan and bake for 35 to 45 minutes or until a cake tester comes out clean. Cool in the pan for 10 minutes, then turn it out onto a cooling rack and let cool completely.
Frosting:
1/4 cup butter, room temp8oz cream cheese3 cups powder sugar, sifted1/2 cup cocoa powder, sifted1 tsp vanilla extract
In a mixer fitted with a paddle attachment, whip the butter and cream cheese together until creamed. Gradually add powdered sugar to the mixture and scrape down the bowl, once the sugar is fully incorporate, add the cocoa powder and mix until well combined. Add the vanilla and mix well.
To Assemble:
7oz chocolate cookies, finely crushed12 Tea cookies
Evenly frost the cake (save some buttercream for the tea cookies), generously spread the cookies crumble on top of the cake, decorate the tea cookies with some buttercream (R.I.P) and arrange them on top of the cake.
